  • The best traditional salted cod from the coasts of Iceland and Faroe, always made with the freshest raw material of the highest quality so that it reaches your table with all the flavor and freshness that characterizes cod. Dried cod loses 2 thirds of its weight during the salting process when it becomes dehydrated, so it is necessary to soak it, first of all to restore much of that percentage of water and especially to desalinate it.
  • We must take into account the size of the cod that we are going to desalinate, depending on its thickness we will have it more or less days in water.
  • Although the thickness varies, as a general rule, we will soak the cod in a container with plenty of cold water between 24 and 48 hours changing the water every 12 hours approximately. A sheet that weighs:
  • Up to 1.5 kg, 2 days, changing the water 2 times a day. From 1.6-2.5 kg, 3 days, changing the water 2 times a day. From 2.6 kg or more, 4 days, changing the water 2 times a day. Crumbling, cocochas, trimmings, 1 day and a half, changing 2 times the water. If we change the water 3 times a day we will reduce the desalination time.
  • If possible and especially in summer, carry out this process in the fridge to always maintain the temperature of the fresh water and thus guarantee a perfect desalination of the cod.
  • We must always put the skin up, that way we will obtain a faster desalination. We advise you to check the salt level raw and each person who decides to their liking.
