Old sheep's cheese.- It is a traditional sheep's cheese. It is handmade with raw milk from selected sheep from Zamora. It has a very persistent aftertaste on the palate that is achieved thanks to the way it is manufactured. It has no bark since we only cover it with olive oil. Old cheese more than 7 months of curing. It has a persistent flavor without being aggressive on the palate. Weight approx. 1.5 kg. It is also marketed in wedges of 750 grams (approx.)

Minimum cure 7 months. More persistent flavor without becoming aggressive on the palate. It differs from other cheeses in its texture since it does not break when portioned. Ideal for restoration and presentations of all kinds. The cheeses of Provenance Toro have, as a distinctive sign, the quality mark D.O. Zamorano Cheese. The methods of elaboration and maturation have been the same for centuries: raw milk, natural lamb rennet and salt. Due to this long tradition, Toro sheep cheeses are awarded, year after year, with international cheese and gastronomy awards. It includes varieties such as Reserva, Viejo, Curado or in butter. As the culmination of this cheese gastronomic philosophy, in 2016 the only Zamora Cheese Museum was inaugurated in the town of Toresana, located in a building adjacent to the Chillón Plaza Cheese Factory. It houses numerous centuries-old pieces, stories and traditions of a family of cheese artisans. The museum facilities show both the reception of the milk, as well as the process of making sheep's cheese, the salting of the pieces, the maturation phase and the final expedition of the product.
