Tag three of our usual beers, Bohemia, Zángano and Trigo.

Processing process:

The malt grains are ground and then mixed with water at a certain temperature to begin the maceration process in which the starch of the barley malt is converted into sugars.

Once the maceration is done, the cereal is filtered so that a beer wort is clean of impurities to bring it to a boil. Hops are added for their conservation and aroma and botanicals that will enhance their personality.

With boiling the wort is sterilized. It is then cooled to 15 and 23º so that the yeasts can develop properly.

Doble Fermentation:

In the 1st fermentation the yeast will transform the sugars of the must into alcohol. This process is carried out in vats with temperature control and the yeasts remain active between 6 to 8 days, a period in which they will have completely fermented. The temperature of the must is reduced to 2°C to be able to extract the yeast, and we will keep it for approximately 5 days so that it matures.

The 2nd fermentation in bottle. Once clarified, sugar is added to the must that will serve as food for the yeast to perform the 2nd fermentation in the bottle in a room with a temperature between 18-20ºC so that the beer can ferment correctly. After approximately one month after maturation in a chamber below 12 ºC, labelling and shipping will be carried out.

Labeling is informed about its composition, storage temperature and to serve and how to mature so that the experience is perfect.
