VARIEDAD CUQUELLO: it is native to the term La Jana and is difficult to find elsewhere. The olive trees have medium dimensions, with a uniform cup and a very straight trunk. The olives of Cuquello are small and round and quite early ripening. It is a high and regular production tree
SERNOTE: Aver-high fruit of green type. The main feature is its sweetness and softness in the mouth, with ripe notes (banana and vanilla) and with a very light spicy and bitterness. Excellent for foods with sweet flavors and desserts.
VARIEDAD FARGA: it is the oldest we find in our territory and extends along the Maestrat and Terres de l'Ebre. The olive trees are very large in all aspects, some millennial specimens have trunks with circumferences greater than 10 meters and very large cups with an area of more than 30 meters. Despite its large dimensions, it is a tree with low yields. Fargas olives are elongated and medium-sized and is one of the first to ripen.
So TASTING NOTE: A medium-high fruit with green notes (cut grass, banana or green nuts). Oil with a great balance between sweet, bitter and spicy and light final astringency. Unctuousness and creaminess in the mouth. Excellent for vegetables, salads, legumes and white meats.
VARIEDAD SEVILLENCA, also called Serrana, is an olive tree with a long tradition in the Maestrat, but it also extends elsewhere in the Valencian Community, such as around the Sierra de Espadan or the Sierra Calderona. The olive trees are of all kinds of dimensions and very irregular shapes, with intersecting branches and twisted trunks. Its production is also very irregular and is usually quite low. Sevillenques olives are small with a nipple-shaped tip and early maturation.
QATAR NOTES: Avero-type green fruit and great aromatic complexity, with ripe notes (apple, banana and strawberry), but also vegetables (fennel, anise, grass). Sweet and almond in the mouth. Excellent for green salads or raw vegetables.
VARIEDAD VILLALONGA: it is an olive tree typical of the Valencian counties of l'Alcoia i el Comtat and was introduced to our area in the 80s, but in a very minority way. Olive trees have a medium dimension and are very brittle, due to their fragility and the very strongly blowing Mistral wind, many times a year. The production of these trees is high and regular, usually produced every year. The olives are very early ripening and are characterized by their large size and round shape.
So TASTING NOTE: A medium-high fruit with green notes (green leaves, cut grass) and with a slight spicy and bitter touch. Aromatic and intense fruity in the mouth. Excellent for red meats, blue fish and also for pickle or confitar.
VARIEDAD CANETERA: o del Riu, as it is known in the Jana, comes from olive trees with a long tradition in our territory. These olive trees have dimensions between small and medium and with little vigor, with very irregular cups and trunks due to their fragility. It is a medium but regular production tree. The caneteres or riu olives mature quite late, are elongated, pointed and medium-sized and differ from other olives by their dotted.
So TASTING NOTE: A medium-high fruit, with green notes (green leaf, green banana, tomato leaf and artichoke). With great aromatic complexity and long stability. The bitter and spicy notes are intense but without astringency. Excellent for cheeses, white fish and meats.
