The Loin of Orza has its origins when in the past there is no #237;an means to preserve the meat from the slaughter. To do this, he was adored, cooked and kept in a clay container full of olive oil called Orza.

In the present day we continue to do it in the same way: we select, clean and cut the loin in tacos, brown it with natural spices and freímos over a very low heat in olive oil. Afterwards, we also pack it #233;n in extra virgin olive oil, which gives it a taste and texture únicos.
